Granola Bars

INGREDIENTS

  • 1/4 cup of J & Jay's Coconut oil

  • 1/4 cup honey (or molasses, agave, etc.)

  • 1 cup oats / granola

  • 1 cup nuts/seeds of choice

  • 1 cup chopped dried fruits of choice

  • 1/4 tsp (kosher) salt

  • 1 tsp vanilla extract

  • Other spices as preferred (cinnamon, nutmeg, cardamom)

INSTRUCTIONS

  1. Melt J & Jay's coconut oil, honey, salt, and other spices in a medium saucepan until uniform and bubbling. Turn the heat to

    low and add the oats then stir to fully coat.

  2. Add the nuts/seeds and stir to coat. Fold dried fruits into the mixture and continue cooking on low until the ingredients are well mixed and sticking together

  3. Line a baking dish with parchment paper and evenly spread the mixture onto half of the baking sheet.

  4. Fold the other half of the sheet over the granola mix and press to pack the mixture into a denser shape.

  5. Place the sheet into the fridge to cool. Allow to cool for 2+ hours.

  6. Remove the granola from the parchment and cut into pieces as desired – should get at least 6-8 granola bars

TIPS

  • Add more infused coconut oil or substitute regular coconut oil based on desired dosing amount.

  • Mix well to get consistent dosing between bars.

  • Partial or full substitute of chocolate or other savory toppings of choice in place of dried fruits to add a savory flavour.
