Roasted Garlic Hummus
Boasting a rich, nutty flavor with creamy texture, roasted garlic hummus is perfect for dipping, spreading, or enjoying straight from the spoon.
INGREDIENTS
• 2 cans (15 oz each) chickpeas, drained and rinsed
• 1/3 cup tahini
• 2 cloves roasted garlic
• 1/4 cup fresh lemon juice (approximately 2 lemons)
• 1/4 cup cannabis-infused olive oil
• 1 tsp ground cumin
• 1/2 tsp smoked paprika
• Salt to taste
• Water, as needed for desired consistency
INSTRUCTIONS
Cut off the top of the garlic head to expose the cloves and place the garlic head on a piece of foil, before drizzling with olive oil, and sprinkle with salt and pepper.
Wrap the garlic in the foil and bake at 400°F (200°C) for about 30-40 minutes or until the cloves are soft and golden.
Allow the roasted garlic to cool, then squeeze the cloves out of their skins.
In a food processor, combine chickpeas, tahini, roasted garlic, lemon juice, cannabis-infused olive oil, cumin, smoked paprika, and a pinch of salt, processing until smooth.
Gradually add water, 1 tablespoon at a time, until you reach your desired creamy consistency.
Taste and adjust by adding more salt or lemon juice to preference.
Drizzle a little extra cannabis infused olive oil on top and transfer the hummus to a serving bowl.
Serve with pita bread, veggie sticks, or your favorite dipping items.
